Topic: Acorn processing into edible flour and baked goods In this workshop we will learn about the amazing and edible acorn. This often overlooked nut was once a staple crop for indigenous peoples wherever oaks grew, it's time we start eating acorns again! Students will go home with the knowledge of how to identify different species of oak, how to pick, process and eat acorns in a variety of ways and the history behind it all, connecting it all to the past, present and future of this truly amazing food. Each student will also take home with a finished jar of acorn flour! James will also make a selection of baked goods containing acorns and chestnuts for everyone to sample, so this is NOT the best class for people with nut allergies. Students will come away with knowledge and confidence to explore the edible landscape in a new and informed way! This class is strictly limited to 12 participants, and we expect it to sell out quickly. Please register ASAP to avoid disappointment. INSTRUCTOR: James Mann is the owner of Spicebush Woodcraft and Foraging, and he is a naturalist, forager and chef. He came to Columbus to attend culinary school, where he dove into cooking gourmet food at the top restaurants in town. Now he leads foraging walks and dinners for the public, offers processing workshops and other land management services. In the deep winter, he focuses on making furniture using traditional building techniques and local hardwoods.
